This homemade chicken soup recipe is easy to make and really brings out the essence of the chicken. Consisting of only a few ingredients, its simplicity allows you to taste the natural flavors of each ingredient.


The soup is perfect to make during the colder months and makes multiple servings.


Servings: ~6 bowls


Ingredients:

  • Half chicken
  • Mushroom (6-8 caps)
  • Scallion (3 stalks)
  • Ginger (6 pieces)
  • Chinese cooking wine (a splash)
  • Bonito powder, 柴魚粉 (a pinch)
  • Salt (to taste)


Directions:

  1. Wash the chicken and remove the innards
  2. Wash mushrooms and prepare scallion/ginger
  3. Bring a pot of water to boil
  4. Place chicken, mushroom, scallion, and ginger into the pot
  5. Add a splash of Chinese cooking wine
  6. Boil for 5 min
  7. Reduce heat to low to allow soup to simmer
  8. Simmer for 1.5 hours
  9. Add a pinch of bonito powder
  10. Flavor to taste with salt (usually not needed)
