Homemade Chicken Soup

This homemade chicken soup recipe is easy to make and really brings out the essence of the chicken. Consisting of only a few ingredients, its simplicity allows you to taste the natural flavors of each ingredient.
The soup is perfect to make during the colder months and makes multiple servings.
Servings: ~6 bowls
Ingredients:
- Half chicken
- Mushroom (6-8 caps)
- Scallion (3 stalks)
- Ginger (6 pieces)
- Chinese cooking wine (a splash)
- Bonito powder, 柴魚粉 (a pinch)
- Salt (to taste)
Directions:
- Wash the chicken and remove the innards
- Wash mushrooms and prepare scallion/ginger
- Bring a pot of water to boil
- Place chicken, mushroom, scallion, and ginger into the pot
- Add a splash of Chinese cooking wine
- Boil for 5 min
- Reduce heat to low to allow soup to simmer
- Simmer for 1.5 hours
- Add a pinch of bonito powder
- Flavor to taste with salt (usually not needed)
